Tonight’s Menu

I had a great trip to the store today. Tonight after I got home from the JFP I decided to play around and try something new. Manicotti.

The biggest challenge I had was guessing the correct portions to use. I settled on five manicotti (pieces? noodles? rolls?) which was a good amount. I boiled those and browned some turkey meat. I’ve been subbing turkey in for stuff that I’d normally use beef for and enjoying that.

I made a mixture of ricotta cheese, cheddar cheese, garlic, and an egg. After I pulled the manicotti out, I stuffed each piece with some of the mixture and meat. It was difficult to get it all in there at first, but I was able to get it in without tearing the manicotti.  Crisis #2 averted.  I covered it with sauce and shredded mozzarella an baked it for maybe 15 minutes. (I didn’t hear the timer b/c I was watching Entourage.)

It came out great! It was really rich and awesome. A relatively easy meal that was new to me.
